As someone else mentioned, Only You is so fantastic. Probably my favorite Rom-Com set in Italy, so naturally I own it. Also I own Three Coins In A Fountain . To plump up this list I would also add Tre Uomini e Una Gamba, (Three Men and a Leg) and also The Big Night. The latter is not set in Italy but the two main characters are Italian brothers who own/run an Italian restaurant and it is infused wi the a ton of Italian culture and belief systems. Finally, I love The English Patient. Yes it is set all over Egypt and Italy, but the retelling is from Italy. Such an important, brilliant film.
Other greats are Captain Corelli’s Mandolin, A Haunting In Venice,

Oh, you have to add my favourite movie of all time to the list - “Enchanted April.” The movie tells the story of four dissimilar English ladies who go on holiday in the 1920’s to Italy after seeing an advertisement for a small medieval castle in Portofino on the beautiful Italian Rivera. The scene on their first morning in Italy is spectacularly memorable. A real feel- good movie!
The Criterion Channel, during the month of May, is showing about eight or ten movies filmed in Venice. I have not yet seen all of them, but I saw Senso, by Lucchino Visconti, the director of The Leopard, which is on your list. I love all movies by Visconti. My favorite movie showcasing the beauty of Italy, however, must be L’Avventura, by Michelangelo Antonioni. The latest Ripley movie director must certainly have been inspired by the stark, beautiful black & white cinematography of L’Avventura.
Summertime with Katherine Hepburn is another classic. Filmed in Venice it showcases the city beautifully. It's a bit corny, as some older movies can be, but I love it and usually watch it every year before we go. The apartment we rent is right by campo San Barnaba where the famous "fall in the canal" scene is filmed.
I just finished Ripley on Netflix. Loved it and all the Beaty of Italy.
I would also add Il Postino.
